My version:
3/4 cup of white sugar or sugar substitute
1/3 cup of good cocoa
3 tablespoon. of corn starch
Mix and blend well in a sauce pan.
Slowly add in small portions at a time, 2 cups of milk.
Cook at medium high heat, I stir constantly.
After is comes to a boil, I let cook for 5 minutes.
Turn off heat, add a tablespoon of butter and a teaspoon of vanilla extract.
Stir and I let sit in a cold water bath, stirring occasionally until pudding cools and put in serving dishes.
At my home when my son is here, there is mine and his. ;)
I use the same for a chocolate pie filling, if I get ambitious, I will stir in beaten egg yokes and beat the whites for meringue. I have also shaved chocolate squares instead of using cocoa.
