Beefy Veggie Soup

What You'll Need

1 pound 80% or 85 % ground beef
1/2 cup chopped onion
2 cloves garlic, minced or 1 teaspoon garlic powder
1 (16-ounce) package frozen soup vegetables with potatoes in them or can
substitute canned mixed vegetables
1 (14-1/2-ounce) can Italian Style diced tomatoes
1 small can low sodium v 8 Juice
Add water according to how soupy you want it to be
1 teaspoon Italian seasoning
1 teaspoon chili powder
salt and pepper to taste

What to Do

1. Coat a medium nonstick skillet with cooking spray. Over medium heat,
cook beef, onion, and garlic (if using garlic cloves) 4 to 6 minutes or
until browned, stirring occasionally; drain off liquid.
2. In a 4- to 5-quart slow cooker or cooking pot, combine vegetables,
the beef mixture, tomatoes, v 8 Juice, water, garlic powder (if
not using garlic cloves), and Italian seasoning. For slow cooker, cover
and cook on LOW 4 to 6 hours or HIGH 3 hours. For in a pot on top of
the stove, bring to boil and then lower heat and cook for 30 minutes then
let simmer for about an hour.
